    Don't mess with this Central Texas brisket. It's light on ingredients and heavy on flavor inspired by the "Lone Star State."

    • 1 whole packer brisket (14-18 lbs)
    • 1/2 cup kosher salt
    • 1/2 cup ground black pepper
    • 1 tbsp onion powder
    • 1 tbsp granulated sugar

    When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 225 degrees and preheat, lid closed, for 10 to 15 minutes.

    Trim the excess fat off the top of the brisket and down to ¼ inch on the bottom. Mix the salt, pepper, onion and garlic. Coat the brisket with a heavy coating of the spice mixture.

    Place the brisket in the grill until it reaches an internal temperature of 170 degrees, approximately 5-6 hours. Remove brisket and wrap tightly in Traeger Butcher Paper. Place the wrapped brisket back in the grill and cook until it reaches an internal temperature of 205 degrees.

    This should take an additional 4-5 hours. When the brisket reaches 205 degrees, remove grill and let it rest for 30 minutes. When ready to eat unwrap brisket and slice against the grain. Enjoy!
