    • Traeger Thai Red Curry Rub

Combine all the marinade ingredients together in a bowl. Pour the marinade into a large resealable bag along with the chicken breasts. Marinate chicken 1-4 hours.

When ready to cook, Start the Traeger on Smoke with the lid open until the fire is established (about 5 minutes). Preheat to High heat, lid closed, for 10 to 15 minutes.

Take the chicken out of the marinade and place directly on the grill grate. Cook for approximately 10 minutes per side or until it reaches an internal temperature of 165 degrees F on an instant read thermometer.

Let chicken rest for 5 minutes before serving.

Garnish with fresh cilantro and coconut flakes. Enjoy!
