Our wood-fired sausage hash recipe uses Jacobsen Salt Co.’s world famous Pure Kosher Sea Salt. Serve this high-protein dish for breakfast, or dish it out for a side dish at the next potluck.
- 2 lbs Hot Sausage Links
- 2 lbs Fingerling Potatoes
- 4 tbsp Butter
- 1 1/2 tbsp fresh thyme
- 1/2 cup white wine
- 1 tbsp Jacobsen Salt
- 1/2 tbsp black pepper

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 375 and preheat (about 10-15 minutes).
Put your sausage links on the grill to get some color. This should take about 3 minutes on each side. While sausage is cooking, cut the potatoes into bite size pieces all about the same size so they cook evenly. Chop the thyme and butter, then combine all the ingredients into a Traeger cast iron skillet.
Pull your sausage off the grill, slice into bite size pieces and add to your cast iron.
Turn grill down to 275 and put the cast iron in the grill for 45 minutes to an hour or until the potatoes are fully cooked.
After 45 minutes, use a butter knife to test your potatoes by cutting into one to see if its done. To speed up cook time you can cover cast iron will a lid or foil. Serve. Enjoy!
