If you’ve got to eat your vegetables, these fancy-looking carrots taste smokin’ delicious. They're easy to make & are perfect for a holiday side dish or any night of the week.
- 12 heirloom carrots
- 3 tbsp good olive oil
- 1 1/4 tsp Jacobsen salt
- 1/2 tsp freshly ground black pepper
- 2 tbsp minced parsley

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes.
If the carrots are thick, cut them in half lengthwise; if not, leave whole. Slice the carrots diagonally in 1 1/2-inch thick slices. (The carrots will shrink while cooking so make the slices big).
Toss them in a bowl with the olive oil, salt, and pepper. Transfer to a sheet pan in 1 layer and roast in the Traeger for 20 minutes, until browned and tender.
Toss the carrots with minced dill or parsley. Season to taste, and serve. Enjoy!
