Cored sweet apples are stuffed with caramelized onions and chorizo. This sweet and savory dish can be served for breakfast, lunch, or dinner.
- 8 large apples
- 3 tbsp Butter
- 1 small onion, finely chopped
- 1 rib celery, finely chopped
- 12 oz bulk raw chorizo
- 4 tbsp Traeger Mandarin Glaze
- Salt and Pepper, to taste

Melt butter in a large skillet over medium heat. Add the onion and celery and cook until golden brown, about 4 minutes.
Add the chorizo and increase the heat to high and cook to lightly browned, 6 to 10 minutes.
Drain off excess fat and season with salt and pepper to taste.
Remove the core from each apple to create a large cavity. Don’t cut all the way through to the bottom.
Spoon the stuffing mixture into the apples, dividing it evenly among them and pressing it in firmly.
Spoon Mandarin Glaze on top of the stuffing in each apple and place a small piece of butter on top of each apple.
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 275 degrees F and preheat, lid closed, for 10 to 15 minutes.
Place apples on grate for 40-60 minutes until they are fork tender.
Once done, remove from heat, rest for 5 minutes and serve. Enjoy!
