Spice your day with one incredible fatty: a meaty sausage loaf with jalapeño popper filling, all rolled in a bacon weave.
- 1-1/2 lb bacon
- 2 lb breakfast sausage
- 8 oz cream cheese
- 2 jalapeños, seeded and chopped
- 3 tbsp jalapeño jelly
- 1/4 cup Traeger Big Game Rub
- 1/2 cup Traeger Texas Spicy Sauce
- 1-1/2 lb bacon

- 1/2 cup Traeger Texas Spicy Sauce
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 275 degrees F and preheat, lid closed, for 10 to 15 minutes.
Flatten out breakfast sausage on a piece of parchment paper or waxed paper.
Combine cream cheese, chopped jalapeño and jalapeño jelly until mixed well. Spread the cream cheese mixture evenly over the sausage leave a 1-1/2 inch border on all sides.
Roll the sausage into a loaf and seal all edges so the filling stays inside.
Weave the bacon and wrap around the sausage loaf or simply wrap the bacon around the loaf.
Cover the bacon wrapped sausage loaf in a light layer of rub.
Place the loaf in the grill and cook for 1 hour and 15 minutes. When fully cooked, the internal temperature should reach 160 degrees F. If not done, continue to cook loaf until it reaches and internal temperature of 160 degrees F.
Once temperature is reached, brush loaf with a light layer of sauce and let it continue to cook for 10 minutes.
Remove loaf from grill and let it rest for 10 to 15 minutes. Slice and enjoy!
