Braising anything in beer makes it better. Add bacon into the mix and you’ve got a winning cabbage dish.
- 1/4 lb bacon, bulk unsliced (cut into 1/2 in cubes)
- 1 medium (2 lbs) green cabbage, quartered, cored and thinly sliced
- 1 cup apple, cored and diced small
- 1 cup yellow onion, diced small
- 12 oz Light Beer
- sea salt and fresh ground black pepper, to taste
- 1/4 lb bacon, bulk unsliced (cut into 1/2 in cubes)

- 12 oz Light Beer

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325 degrees F and preheat, lid closed, for 10 to 15 minutes.
On a stovetop, heat a large heavy pot or Dutch oven over medium heat. Add the bacon and cook until crisp (about 5 mins). Transfer to a plate lined with paper towels.
Return the pot to medium heat. Add the onion and cook for 5 minutes, or until golden brown. Add the apple, stir, then add the cabbage. Sprinkle generously with salt and a touch of black pepper and stir for 3 minutes.
Pour in the beer and bring to a boil over medium-high heat. Cover and move the pot immediately into the Traeger.
Cook at 325 degrees F for 10 minutes. Remove lid and cook for an additional 10-15 more minutes, or until cabbage is tender and most of the liquid has evaporated.
Add the reserved bacon and stir into the cabbage. Enjoy!
