    Reverse seared like a boss, this juicy tri-tip is everything a steak should be: juicy, flavorful, and addicting.

    • 3-5 lb Tri-Tip
    • 1/8 cup pepper
    • 1/8 cup salt
    • 3-5 lb Tri-Tip
    • 1/8 cup pepper
    • 1/8 cup salt

    When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 225 degrees F and preheat, lid closed, for 10 to 15 minutes. *If using the Timberline grill, select Super Smoke option.

    Trim any excess fat off of the tri-tip.

    Combine salt and pepper. Season all sides of meat with a heavy coat of the salt and pepper mixture. 

    Place tri-tip directly on the grill grate and cook until it reaches an internal temperature of 135 degrees F. This should take 1 to 1-1/2 hours. 

    When tri-tip reaches 135 degrees F, pull off the grill and wrap in foil. Set aside while grill heats up.

    Turn the grill up to High and preheat, lid closed, for 10 minutes. *If using the Timberline grill, move the lower rack to Sear position. Set the temperature to 500 degrees F and preheat, lid closed, for 10 minutes.

    Sear Tri-Tip for 4 minutes on each side. Pull off the grill and allow to rest for 10-15 mins.

    Slice against the grain to serve. Enjoy!
