Get a taste of why fire-roasting corn in the husk has lasted through the centuries with this smoky & savory grilled corn recipe.
- 4 ears corn, in husk
- 3 green onions
- 6 tbsp butter, softened
- 1 tsp chile powder
- 1 tsp toasted sesame seeds

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325 degrees F and preheat, lid closed, for 10 minutes.
Slightly char green onions and set aside.
Sesame-Chile Butter: Take butter out of fridge and let soften. Chop up charred green onions and add to butter along with chile powder and sesame seeds. Mash all ingredients together.
Grill corn, rotating occasionally, until husks are blackened (some will flake and fall off) and kernels are tender with some browned and charred spots, about 25–35 minutes.
Let corn cool slightly, then shuck. Serve with the Sesame-Chile Butter. Enjoy!
